Saving water is top priority when cooking off-grid, fresh water is precious and minimising dishes is imperative!

Allow me to introduce my secret ingredient… the multicooker. With so many talents – a pressure cooker, slow cooker and steamer, all in one – what’s not to love!

But that’s not all, it has many other functions including reduce, sauté, and and sear. I think of it as the poor cousin of the Thermomix, (which I don’t have…yet).

You can sauté ingredients in the cooker before building the main meal – just one bowl to wash up. What’s more, it’s quite low on power consumption compared to other appliances in the van, (we run solar electricity not gas – click here for more info).

Plan ahead & maximise your time

Now in our eighth month of full-time travel, (with our kids 24/7), we’ve had to find new ways to tackle “witching hour!”

The slow cooker function on our multicooker is my secret weapon. It allows me to prepare dinner early in the day so that we can enjoy our afternoons with some. peace – ideally with a drink and sunset. The multicooker also has a “keep warm” function allowing me to flex dinner time – to squeeze in 5 more minutes at the beach.

Cooking ahead helps us transition into the craziness of night routine as we have less to do… an extra hour of adult time is well worth the extra planning!

Cooking for a group?

If you’re like me, I struggle to hold a conversation whilst cooking. The slow cooker is a great way to manage your social time and still serve up a delicious meal. Get the cooking out of the way early so you don’t miss the party.

Take the pressure down

Despite all good intentions of starting dinner early, often we don’t get back from our adventures on time. Pushing dinner back is largely by design after all life’s far too short to miss out on that sunset at the lighthouse or snorkel on the reef.

I also have a backup plan – the pressure cooker. The majority of my slow cooker recipes can easily be whipped up in no time with a conversion to the pressure cooker setting.

Not all meals are created equal
